Beverage Director, Papa Razzi Metro
Dedicated to preserving the history of classic Italian drinks, Beverage Director Shawn Westhoven is responsible for sourcing authentic Italian beers, wines, spirits, as well as creating his own infusions for Metro. He relentlessly channels his creativity in search of new and unique ways to encapsulate Italian classics while paying homage to their roots. “I compare it to the old times, which is important. It’s a classic and we want to update it while keeping it classic.”
Westhoven’s 18 years of experience spans across the Newport Restaurant Group including opening Castle Hill in 1996 after completing his culinary degree from Johnson and Wales. He then went on to manage an impressive list of Newport restaurants including General Manager at The Mooring and Smoke House Café, Assistant General Manager at 22 Bowen’s, and Opening Manager at Boat House Restaurant in Tiverton. Westhoven brings to the Metro team a creative counterbalance that has lead to some truly original infusions for the beverage program including his own Figcello—made from soaking dried figs in a jar of vodka for four weeks.
When he’s not thinking about new ways to reinvent Italian classics, Westhoven enjoys going to the beach, biking, and exploring the abundance Newport has to offer with his wife Allison.
